Vegetable soup "Basischer Borschtsch"
Ingredience for 4 persons:
- 2 big potatoes
- 2 beetroots
- 1 liter vegetable soup
- 1 onion
- 1 small white cabbage
- 3 tb pumpkin seed oi
- pepper, herb salt and fresh coriander
preparation:
Wash the potatoes and beetroots, peel, cut in small cubes/slices and cook it with the vegetable soup.
Peel the onion and cut it in cubes. Wash the white cabbage and cut it in small stripes.
Heat the pumpkin seed oil in an other pot, add the onion cubes and the white cabbage stripes and braise them lightly. Add this to the vegetable soup shortly after.
Now cook the vegetable soup for approx. 20 minutes so every vegetable is done. Season with herbs and serve.
