Homemade Sonnreich pumpkin spaetzle
ingredience for 4 persons:
- 500 g peeled pumpkin
- 300 g potatoes cutted in smal cubes
- 1 onion
- 3 tb butter
- approx. 300 ml water or vegetable fond
- salt, nutmeg, pepper, grounded caraway
- 3 eggs
- 150 g plain flour
- 150 g coarse-grained flour
For the pumpkin purée cut the pumpkin and the potatoes in cubes. Peel and finely chop the onion. Afterwards roast it lightly.
Add pumpkin and potatoes cubes and pour in water or vegetable fond. Cook it with the lit for 15 minutes. Then purée it.
Add flour and eggs to 150 g of the pumpkin purée and mix it to a dough, season it and let it sit for 10 minutes.
Press the dough through spaetzle siev into a pot with cooking salt water. Bring it once to boil, take ot out and rinse the spaetzle.
Melt butter in a pan, add the spaetzle , toss it in butter season and decorate with parsley.
