Apple strudel

Apple strudel

Ingredients for 4 persons: 
For the filling:
  • 500 g apples
  • 80 g sugar
  • 1 teaspoon vanille sugar
  • 1 tablespoon citrus juice
  • peel of the bio citrus fruit (grated)
  • 4 cl rum
  • 40 g raisins
  • 70 g breadcrumbs
  • 40 g butter
  • cinnamon
  • 50 g butter (melted)
  • icing sugar
for the strudel dough:
  • 125 g plain flour (Type 700)
  • 70 ml water (lukewarm)
  • 2 tablespoon oil
  • salt
  • oil
  1. Make a dough with flour, water, oil and salt. 

  2. Mould the dough to a ball, put it on a floured plate and rest it covered for aprox. 1 hour.

  3. For the filling peel the apples, cut out the  core and cut the apple in slices. Add sugar, vanille sugar, citrus juice and peel, half of a table spoon cinnamon, rum and raisins. Now rest it for approx. 15 minutes. Pour off the  builted juice. Fry the breadcrumbs in butter.

  4. Preheat the oven to 180°C. Put backing parchment on the backing tray. Now roll out the dough on a floured kitchen cloth very thin and entrust butter on it. Take the fried breadcrumbs and apples and place it 2/3 on the dough. Cut out the thick edges of the dough. Now roll the dough with the help of the kitchen cloth to a roll. Press the edges of the dough together.

  5. Take the strudel and put it with the opening side down on the backing tray. Butter the dough and back it for 50 minutes on the lowest tray in the oven. Afterwards cut the dough and put icing sugar on it.
